That was just the beginning.  (I would have taken more pics, but honestly, I got hungry and ate everything before I thought about it.)

Kelly Jo from The Organic Food Nanny and Piato Cafe kicked off Vegucation with a bang.  She started with Zucchini Chips.  Amazingly simple.  Sliced, rolled in flour, egg, panko breading and quick fried.  Super tasty.

Next up Pesto Penne Pasta.  Again, pretty basic pasta dish, but with lots of great tasting veg.  Mushrooms, zucchini, summer squash, cherry tomatoes, onions all sauted together.  Then throw in some salt, pepper and spinach, along with some pesto.  Add heavy cream, reduce.  And pour over penne pasta.  Done.

Finally, eggplant lentil chilli.  Tomatoes, onions, black beans, cummin, parsley, salt, pepper, eggplant, and lentils.  Toss together.  Cook it up.  Man, that’s a mouth full of tasty veggie goodness.
